Pancake Love..

Weekends are made for pancakes. And when it’s subzero temperatures outside like it was last weekend, we make lots of them. While the world was celebrating Valentine’s Day, we were celebrating the Tall Texan’s birthday. Oh sure, there were red roses and pink tulips to mark the holiday, but the real focus was on his birthday. And we love our pancakes…
One of my favorite stories to read to my students is Tomie DePaola’s Pancakes For Breakfast.  It’s the sweetest book and gives my students a little glimpse into my world away from school.  The little ones tend to think my permanent residence is my classroom, but this gives them a vision into my home life.

The book has no words, so it’s fun to teach that you can “read” a book even when an author doesn’t provide words.  This looks just like our cozy cottage except that ours is yellow:

And I tell my students that this looks just like me on a Saturday morning (minus the cat)…

Last Saturday we were preparing to have friends over for dinner, so I needed a fast & easy recipe for breakfast.  These Banana Oat Blender Pancakes had caught my eye earlier in the week and knew would do the trick.  Since they don’t have any flour in them at all, they’re a bit delicate.  I found that making them a bit on the smaller side made them easier to manage:

The bananas give them a satisfying sweetness. The flaxseed meal gives them an Omega-3 fatty acids (a type of fat essential for brain function) and dietary fiber (a type of carbohydrate important to digestive health) one, two nutritional punch.  I highly recommend.

The Tall Texan gave them a thumbs up and they kept us full and happy until it was time for his birthday dinner.  Give them a try!

  1. I am never quite sure how to use flaxseed properly, but I know it’s so healthy so I want to try. Your post have me inspiration! The pancakes look delicious!!! Mind sending me some? 😉 haha

    1. Aww, nothing makes me happier than making food for people–so I surely would if I could! 🙂
      As for the flaxseed, it’s like with anything unfamiliar..I just started experimenting with it. It pairs really nicely with gf oatmeal in the morning, so I toss in a tablespoon. Or when I make oatmeal cookies, I toss in a quarter cup or so. I love adding in that extra bit of nutrition and it really deepens a flavor!
